..I have written Silk and hope to get a response soon. I find it strange that Silk was sampling their yogurt to well known vegans at Expo West last spring (where I first tasted it) yet their website says this. I hope the have a good explanation. Silk offers numerous dairy-free products, including yogurts made from almond milk. The unsweetened variety also contains chicory root extract, live active cultures, and thickening and flavoring agents.
Yogurt can be a healthy and satisfying snack. However, be sure to read the ingredient and nutrition facts labels to avoid large amounts of added sugar, which can make yogurt more of a dessert than a nutritious snack.
For the most part, this was ok since the flavor of the yogurts made up for any lack of tang-iness. We also elected to taste the vanilla flavor of each brand across the board, with the exception of one greek style yogurt that only came in blueberry.
It also still was somewhat chunky after continued stirring, so I would say the texture was the downside to this soy yogurt. Otherwise, the vanilla flavor came through really nicely and it did have the usual yogurt tang to it.

I've used both clear gel and ultra gel in other things, and I am surprised that the texture would be suitable for yogurt. I wouldn't have thought to use it in this way. I'm going to try it though as I too have been unhappy with the consistency I've gotten with straight soymilk. I've tried oatmeal and arrowroot as well with less than satisfactory results (except for with my grandson who will eat anything). So definitely worth a try. I'll report back.
Bryanna ... this post comes at a PERFECT time. I got a Instant Pot a few months ago, and one of the things I've been experimenting with is yogurt. I love how easy this recipe is, and the fact the THREE (!!) ingredients are so easily obtained (Instant Clear Jel is in our local grocery store).One question on the 2 minute microwave heating of the 8oz of milk. Since microwaves vary so wildly (mine is an ancient 600 watt thing), what are you aiming for at the end of the 2 minutes ... the milk boiling Or just mildly warm Or ..... Could you give us a temperature to which to heat itAlso, I presume the milk should be room temperature to begin with. I often keep my unopened cartons in the fridge so they are ready to go (cold) for when I need it.Thanks so much!!
